Slimway recipe for Herb Chicken Salad
A beautiful chicken salad for lunch.
1 chicken breast
A few leaves of lettuce
1 tomato, sliced
1/4 red onion, sliced
a few olives
2 cal spray (olive oil spray)
ground black pepper and sea salt
1 tsp mixed herbs
Spray 2 cal spray in a skillet over medium heat.
Place the chicken breast on a side plate, spray with 2 cal spray.
Season the chicken breast with black pepper, sea salt and mixed herbs. Gently pat the black pepper and herbs into the chicken breast. Place in the middle of the skillet and fry for 5-6 minutes each side.
Add the lettuce leaves, tomato, onion and olives.
Spray with fat-free vinegarette, give a little toss to coat the salad with the vinegarette.
Serve the salad along with the herb chicken breast.
